HACCP 2 - Personal hygiene

Every human carries micro-organisms which are not detectable to the naked eye. These micro-organisms can be found on the skin, in the hair, under the nails and in wounds, among other places. Some of these micro-organisms can be transmitted to other people through food products, causing a foodborne infection. Good personal hygiene is therefore very important.
